These cookies are a must have in my house. They are a hit with the kids and any guests that we have over and of course with Jeremy and me. I started making these when I started on the paleo diet to help with my sweet tooth cravings. THEY ARE AMAZING. I could literally eat the whole batch…by myself…in one sitting…
If you have a blender or food processor that has a “dough” setting then this is such an easy recipe because you can just throw everything into the blender with very little mess or clean up!
Ingredients:
1 cup blanched almond flour
1/4 cup coconut flour
1 teaspoon baking soda
1/4 teaspoon Himalayan pink sea salt (optional)
3 tablespoons ghee
3 tablespoons coconut oil
3/4 cup coconut sugar
6 tablespoons almond butter
1-2 teaspoons vanilla extract
1 large egg, whisked
1 1/4 cups paleo friendly chocolate chips
Directions:
1.) Throw everything in written order into your blender or food processor and turn on the “dough” setting and then skip to step 6. If you do not have a blender or food processor then skip to step 2.
2.) Combine the almond flour, coconut flour, baking soda, and salt in a mixing bowl.
3.) In a separate mixing bowl combine the ghee, coconut oil, and coconut sugar and beat with a stand mixer or an electric hand mixer, or just use your hands to combine if you’re feeling a little dirty.
4.) Next, beat in the almond butter, vanilla extract, and whisked egg along with the fat and sugar mixture.
5.) Add in the flour mixture and mix well.
6.) Add chocolate chips to the mixture, roll into one large ball, and place in the refrigerator for 45 minutes or until the dough is firm.
7.) Preheat oven to 350 degrees and line a baking sheet with parchment paper.
8.) Roll the dough into 8 large balls or 16 small balls and then press the cookies down with the palm of your hand.
9.) Bake for 12-14 minutes.
10.) Let cool on baking sheet for 10 minutes before demolishing.
