I have tried making many different granola recipes until I could get it how I wanted and this one is the winner. It is protein packed with almonds, cashews, pumpkin seeds, walnuts, sunflower seeds, hemp seeds, and chia seeds. Not to mention it’s freaking delicious! I love granola and it’s a must have item in my house because I put granola in almost all of my smoothie bowls and I love eating it as a snack when I’m craving something sweet, but still want something healthy.
Ingredients:
1/2 cup raw almonds
1/2 cup raw cashews
1/4 cup walnuts
1/2 sunflower seeds
1/2 cup pepitas (pumpkin seeds)
1 tablespoon chia seeds
2 tablespoon hemp seeds
2 teaspoons cinnamon
2-3 tablespoons coconut oil
1 tablespoon ghee
4 tablespoons sunflower butter
1 teaspoon vanilla extract
Directions:
- Preheat oven to 325 degrees and line a large sheet pan with parchment paper.
- Combine the almonds, cashews, walnuts, sunflower seeds, and pepitas into a food processor until broken up into small pieces. Be careful not to process for too long otherwise you’ll basically have flour and that’s not helpful.
- Add the chia seeds, hemp seeds, and cinnamon to the nut mixture and stir well.
- Melt coconut oil and ghee in the microwave for about 30 seconds. Once melted add the sunflower butter and vanilla extract and stir until smooth.
- Combine the sunflower butter mixture and nut mixture, stir well, and place on the parchment lined pan and flatten out. Optional: Drizzle raw honey over the flattened granola mixture before placing in the oven.
- Place in oven for 20 minutes stirring halfway through.
- Remove from oven and let sit for 20 minutes to harden and then break into small chunks and add some dried fruit like cranberries or raisins.
