Paleo Granola Crunch

I have tried making many different granola recipes until I could get it how I wanted and this one is the winner.  It is protein packed with almonds, cashews, pumpkin seeds, walnuts, sunflower seeds, hemp seeds, and chia seeds.  Not to mention it’s freaking delicious!  I love granola and it’s a must have item in my house because I put granola in almost all of my smoothie bowls and I love eating it as a snack when I’m craving something sweet, but still want something healthy.


Ingredients:

1/2 cup raw almonds
1/2 cup raw cashews
1/4 cup walnuts
1/2 sunflower seeds
1/2 cup pepitas (pumpkin seeds)
1 tablespoon chia seeds
2 tablespoon hemp seeds
2 teaspoons cinnamon
2-3 tablespoons coconut oil
1 tablespoon ghee
4 tablespoons sunflower butter
1 teaspoon vanilla extract


Directions:

  1. Preheat oven to 325 degrees and line a large sheet pan with parchment paper.
  2. Combine the almonds, cashews, walnuts, sunflower seeds, and pepitas into a food processor until broken up into small pieces.  Be careful not to process for too long otherwise you’ll basically have flour and that’s not helpful.
  3. Add the chia seeds, hemp seeds, and cinnamon to the nut mixture and stir well.
  4. Melt coconut oil and ghee in the microwave for about 30 seconds.  Once melted add the sunflower butter and vanilla extract and stir until smooth.
  5. Combine the sunflower butter mixture and nut mixture, stir well, and place on the parchment lined pan and flatten out.  Optional:  Drizzle raw honey over the flattened granola mixture before placing in the oven.
  6. Place in oven for 20 minutes stirring halfway through.
  7. Remove from oven and let sit for 20 minutes to harden and then break into small chunks and add some dried fruit like cranberries or raisins.
