These are by far the easiest cookies I’ve ever made and they are so freaking delicious! You can make these into cookies, balls- whatever you want!
I came up with this recipe because one day when my husband and I were at Starbucks, I ran across “Emmy’s Organics” dark cacao coconut cookies and thought they were amazing so I wanted to make my own, and that I did! These are so quick and simple to make and you’ll want to keep your fridge stocked with them!
Ingredients:
3/4 Cup of Raw Honey or Maple Syrup
1/3 Cup Coconut Oil
1 Tbsp Vanilla Extract
3 1/2 Cups Shredded Coconut
2/3 Cup Cacao Powder
1/2 Cup Almond Flour
Directions:
- Line a large baking sheet with parchment paper.
- Melt the raw honey or maple syrup in a medium size pot over low to medium heat.
- Add coconut oil to the pot an melt together.
- Once melted, add the shredded coconut and vanilla extract and stir well.
- Pour in almond flour and cacao powder and mix well.
- Use an ice cream scoop or spoon to scoop up the mixture and place each cookie or ball onto baking sheet.
- Place in the freezer for about 20 minutes or until firm.
- Store in the refrigerator and ENJOY!
