Easy Paleo No-Bake Cacao Cookies

These are by far the easiest cookies I’ve ever made and they are so freaking delicious!  You can make these into cookies, balls- whatever you want!

I came up with this recipe because one day when my husband and I were at Starbucks, I ran across “Emmy’s Organics” dark cacao coconut cookies and thought they were amazing so I wanted to make my own, and that I did!  These are so quick and simple to make and you’ll want to keep your fridge stocked with them!


Ingredients:

3/4 Cup of Raw Honey or Maple Syrup
1/3 Cup Coconut Oil
1 Tbsp Vanilla Extract
3 1/2 Cups Shredded Coconut
2/3 Cup Cacao Powder
1/2 Cup Almond Flour


Directions:

  1. Line a large baking sheet with parchment paper.
  2. Melt the raw honey or maple syrup in a medium size pot over low to medium heat.
  3. Add coconut oil to the pot an melt together.
  4. Once melted, add the shredded coconut and vanilla extract and stir well.
  5. Pour in almond flour and cacao powder and mix well.
  6. Use an ice cream scoop or spoon to scoop up the mixture and place each cookie or ball onto baking sheet.
  7. Place in the freezer for about 20 minutes or until firm.
  8. Store in the refrigerator and ENJOY!
